La Cocina offers small hands-on classes in Mexican cuisine and is one of the most popular cooking schools in San Miguel de Allende. Classes may include traditional moles and adobos, as well as innovative salsas, healthy salads, and mezcal. Occasionally, guest chefs give classes in various aspects of Mexican cooking, such as Oaxacan Cuisine and The Glory of Agave. Classes are taught in English and are mostly hands-on. Full meals, wine and margaritas, as well as recipe packets, are included in the price.

The chef is Kris Rudolph, who has also owned and operated El Buen Café, a restaurant and catering business in San Miguel de Allende, since 1991. In addition to her cooking skills, Kris has authored three Mexican Food cookbooks and has a background in teaching, most notably at the Institute of Culinary Education in New York City.

Paco Cárdenas, trained chef and proprietor of the popular patisserie/café El Petit Four, offers market tours and cooking classes at his home. Petit Four and Chef Cardenas has been featured in Bon Appétit, OUT Magazine, Travel and Leisure, and Coast Magazine. Your culinary experience takes place in his lovely well-equipped outdoor kitchen where there’s plenty of room for 6 hands-on students.

Students prepare the dishes using ingredients gathered during their tour of the colorful Mercado Ignacio Ramirez El Nigromante and then sit down to feast on the delicious results. Full meals, wine, as well as recipe packets, are included in the price.

Marilau Ricaud has been teaching traditional Mexican cooking in San Miguel since 1989. She descends from a long line of excellent professional cooks and bakers and draws on authentic Mexican recipes passed down in her family for over 200 years. She emphasizes regional specialties of her home state of Guanajuato in her classes as well as the cuisines of Oaxaca, Puebla, and Michoacán.

Classes are taught in English in her well-equipped kitchen classroom with its antique Mexican molcajetes, metates, cazuelas and ollas. Hands-on group classes allow students to choose recipes from a long list of specialties, including moles, salsas, tamales, and cochinita pibil. If you’d prefer a private class, Marilau is happy to design an intensive one-on-one session or series of classes to suit your interests and palate. Full three course lunch and recipe packets are included in the price.

Patsy DuBois came to San Miguel 40 years ago to earn her Masters of Fine Arts degree. She fell in love with the town and never left. Since then, she’s become a popular caterer and cooking teacher.

Visit Patsy’s bucolic ranch a few miles outside of town where she’s built a hacienda-style kitchen large enough to accommodate groups. There she offers one-day and three-day classes of traditional Mexican cooking, catering, special event planning, and a lunch every Sunday afternoon.

The hands-on introductory class provides students with the basics of Mexican cooking using fresh vegetables from her onsite garden and greenhouse. Snacks, full meals, drinks, and recipe packets are included in the price.
